Kohei began his culinary career back in high school, inspired by his Japanese parents and the quality and culture of their cuisine. After graduating from Johnson & Wales University with a bachelor’s degree in culinary arts, he went into a traditional Japanese apprenticeship at Maeda Sushi in Connecticut. He was taken under the wings of chef Eiji Ichimuras, who has been a great mentor to this day. In 2012, Kishida moved to New York City to work at Bouley Restaurant. There he gained extensive knowledge and skills of a Michelin Star-level restaurant, working directly with chef David Bouley. In 2016, with the owners of Kang Ho Dong Baekjong and celebrity chef Lee Ann Wong, Kohei opened the fast-casual Hawaiian Poke concept, Sweetcatch Poke.
